If you wouldn’t eat it raw, you shouldn’t ferment it. Fermentation isn’t a way of salvaging expired food; you should use fresh and healthy vegetables, herbs and fruits. Although you don’t have to go organic, you should stay away from food you know has been aggressively sprayed with preservative chemicals because it will inhibit the ferment… but you probably should stay away from those in general!
