Cold brewing is a gentler way to make hibiscus tea. Instead of using boiling water, the dried flowers slowly infuse in cold water, creating a smooth, refreshing flavour with less bitterness and a naturally bright, fruity taste.

1 cup hibiscus cold brew tea
1/4 cup active ginger bug liquid, strained
1–2 tbsp honey, maple syrup, or sugar
Filtered water to top off

Using the Smart Funnel (make sure the strainer and spout attachments are on), pour the hibiscus cold brew tea into a clean, fermentation-safe bottle. Then pour in the active ginger bug liquid.
Stir in honey, maple syrup, or sugar.
Top with filtered water, leaving 1–2 inches of headspace.
Seal the bottle and let it ferment at room temperature for 1–3 days.
Check daily for carbonation.
Once bubbly, refrigerate well before opening.
Open slowly over the sink, as natural carbonation can build pressure.

Leave headspace. Natural carbonation creates pressure, so leave 1–2 inches of space at the top of your bottle.
Check daily. Fermented sodas can carbonate quickly, especially in warm kitchens.
Refrigerate before opening. Chilling helps slow fermentation and makes the bottle easier to open safely.
Open slowly. Always open fermented drinks carefully and over the sink in case pressure has built up.
